CÔTES DU JURA
Vin de paille is a sweet, exquisite nectar. It is made from the Jura wine region’s finest grape varieties, using a traditional technique handed down from one generation to the next.
Amber colour with brilliant mahogany glints. Very intense, spicy nose, with candied fruit, caramel and roasted hints. Rich, smooth attack in the mouth. The wine’s sweetness is pleasant since its acidity maintains the balance. It has a remarkably concentrated finish.
Vin de paille has long been used as a natural energy-boosting tonic. It is a delightful accompaniment for appetizers, foie gras or desserts, for example with allspice iced soufflés or chocolate fondant cake.
Serve vin de paille, preferably chilled to 6–8°C. (42-46°F.).
Ready to drink, but can be kept for up to 20 years.
The Jura wine region is small in size but large in its remarkable diversity. It covers 80 kilometers between Burgundy and Switzerland, in the eastern France.
Created in 1937, the AOC (designation of origin) of Cotes du Jura is omnipresent in the north and south of the vineyard, on varied and contrasting terroirs. It is the second leading AOC in Jura in terms of production, and it engages all five of the Jura's grape varieties.
Our oenologists select grape bunches for vin de paille at the start of the harvest season. They are picked exclusively by hand, put in trays and taken straight for raisining in one of our Jura vineyards.
This slow dehydration is a natural way of significantly increasing their sugar content. The grapes are pressed a few months later. The juice is highly concentrated and the finished vin de paille retains a lot of sugar from the grapes.
It is a completely natural syrupy wine that has been matured for at least three years in the barrel.
